ZUCCHINI COOKIES 
1 1/2 c. whole-wheat flour
1 3/4 c. oatmeal
1/3 tsp. salt
1/2 tsp. baking soda
3/4 c. brown sugar
1 tsp. vanilla
1 tsp. cinnamon
1/2 c. raisins
1/2 c. coconut (optional)
1/2 c. butter
1 egg
1 c. grated raw zucchini

Cream butter, sugar, eggs and vanilla. Add dry ingredients, zucchini and raisins. Drop onto greased cookie sheet. Cookies don't spread.

Bake at 350°F for 10 to 15 minutes.
