CREAMY RICE PUDDING 
1/2 c. long grain rice
2 1/2 c. skim milk, divided
3 tbsp. sugar
1/8 tsp. salt
1 egg
1 tsp. vanilla
Mandarin orange segments
Low sugar strawberry jam (opt.)

In medium size heavy saucepan, preferably nonstick, combine rice, 2 cups milk, the sugar and salt. Stir over medium heat until mixture comes to a boil. Reduce heat; cover; simmer, stirring frequently 25 to 35 minutes until rice is tender. Beat remaining 1/2 cup milk, the egg and vanilla; stir into rice mixture. Cook and stir until slightly thickened but still loose and creamy, 2 to 3 minutes. Remove from heat; divide among 5 dessert dishes. Serve warm or chilled. Garnish with oranges and jam. Makes 5 servings.
