BANANA CUPCAKES 
1/2 c. vegetable oil
1 c. sugar
2 eggs
1/2 c. milk
1/2 tsp. salt
1 3/4 c. sifted flour
1 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. vanilla
1 c. mashed ripe bananas

Cream oil (butter if preferred), sugar, and eggs well. Sift together flour, soda, cinnamon, and salt. Add sifted dry ingredients alternately with the milk, beating until smooth after each addition. Add the mashed bananas and vanilla. Spoon into liner filled cup cake pans. Bake at 350 degrees for 20 minutes or until done. Makes 2 dozen.
