BANANA CUPCAKES 
1 2/3 c. flour
1 tsp. baking soda
1/2 tsp. salt
1/2 c. butter
1 c. sugar
2 eggs
1 tsp. vanilla
1 c. bananas
1/2 c. chopped nuts
1/2 c. sour cream

Sift flour, soda and salt. Combine butter, sugar, eggs and vanilla. Cream at high speed for 1 minute and 30 seconds. Add remaining ingredients and mix in bowl at high speed for 1 minute or until blended. Bake at 350 degrees for 12-18 minutes or until done.
