CHEESE STRAWS 
1 lb. sharp Cheddar cheese (New York State, if available)
3 1/2 c. flour
1/4 tsp. cayenne pepper
1/4 tsp. salt
3/4 lb. butter (3 sticks)

Grate cheese. Keep cool. Mix flour, salt and pepper in a large mixing bowl. Cut butter into small pieces and blend into flour mixture. Then blend in grated cheese. make into small balls. Press ball flat. Bake at 375 degrees for 10 to 12 minutes. (If desired, put pecans on top of ball before baking. Press lightly.)
