CHEESE STRAWS 
1 lb. extra sharp cheese
1 stick butter
1 tsp. salt
1/2 tsp. red pepper
2 scant c. flour

Mix cheese at room temperature with butter. Add other ingredients. Mix into stiff dough. Use cookie press to shape. Place on cookie sheet. Bake at 300 degrees until dough is quite stiff on top. WATCH carefully while baking. Makes 6 dozen.

Of all the recipes I've tried for cheese straws, this was the best. I use more cayenne cuz I like 'em with a slow burn; but a little guidance about cooking time would be nice... for nice, crisp crackery straws, about 15 minutes at 300°F.
