BAKED GARLIC | |
3 head (not cloves) garlic 2 tbsp. clarified butter 2 tbsp. chicken broth 1/2 tsp. dried rosemary Salt & white pepper Italian bread, heated Remove outer paper skin from garlic heads. Don't separate into cloves. Place heads in 1 3/4 cup oven proof dish. Combine butter and chicken broth and pour over garlic. Sprinkle with dried rosemary. Season with salt and pepper. Bake at 300 degrees for 1 hour and 15 minutes, basting every 15 minutes with butter mixture. To serve, take off garlic clove and pinch it to remove skin. Spread softened garlic on bread. Bread and garlic are excellent served with goat cheese or herbed cream cheese. My daughter Debbi lives in Chicago and she took me to a restaurant that served this while we were waiting for our order to be taken. Different and lovely to do with bread instead of butter. |
