BANANA NUT BREAD 
1 c. butter, butter or Crisco
2 1/2 c. sugar
4 eggs
2 1/2 c. all-purpose flour
8 lg. fully ripened bananas, mashed
1 1/2 tsp. vanilla
1/2 tsp. salt
2 tsp. baking soda
1 c. pecans, chopped

Preheat oven to 350 degrees. Mix ingredients together with electric mixer just until thoroughly mixed. Spray Bundt pan (or 3 one-pound coffee cans, or 3 loaf pans) with Pam. Pour in batter and bake for almost an hour. Start checking at 50 minutes. Bread is done when toothpick comes out clean.
