BAKED BEEF AND RICE 
1 lb. ground beef
1 c. uncooked rice
1 sm. onion, chopped
2 tbsp. salad oil
1 tsp. salt
1/2 tsp. pepper
1 tsp. paprika
1 sm. bottle stuffed olives
2 c. tomato juice
1 1/2 c. boiling water
1/2 c. cheddar cheese (grated)

Cook beef, rice and onion in hot oil until lightly browned. Season with salt, pepper, and paprika. Add sliced olives, tomato juice and boiling water. Turn into 1 1/2-quart casserole.

Cover and bake in slow oven (300 degrees) for 1 hour. Uncover and sprinkle with cheese. Bake 10 minutes longer or until cheese is melted. Makes 6 servings.
