B.'S DELIGHT 
9" baking dish
1/4 c. dry rice
1/4 c. water
1" thick fillets (or skinless chicken wrapped in bacon)
1/2" tomato slices
Handful of sliced onions and green peppers
3 strips bacon
Barbecue or picante sauce

Place rice in bottom of baking dish, pour in water, then add a layer of fish, top with tomatoes, onions and peppers. Place bacon over top and pour a ring of barbecue sauce. Bake at 350 degrees for 1/2 hour or until bacon is crisp.
