BANANA BROWNIES | |
1 c. mashed bananas (about 2 bananas) 3/4 c. granulated sugar 1/2 c. skim milk with 1 tsp. vinegar 1/3 c. corn oil 1/3 c. cocoa 2 egg whites 1 tsp. vanilla extract 1 1/2 c. all-purpose flour 1/2 tsp. baking soda Heat oven to 350 degrees. Grease and flour 9 inch square pan. In large bowl, with electric mixer at medium speed, beat bananas, sugar, milk, oil, cocoa, egg white, and vanilla until well blended. In small bowl, combine flour and soda. With mixer at low speed, beat flour mixture into cocoa mixture until just blended. Add some nuts if you like. Pour batter into prepared pan. Bake 25 to 30 minutes until wooden pick inserted in center comes out clean. Cool in pan. MINUTE FUDGE FROSTING: 3 tbsp. cocoa 1 c. sugar 1/3 c. evaporated skim milk or 1/3 c. water and 2/3 c. powdered skim milk 1/4 c. butter 1 tsp. vanilla extract Mix all ingredients, except vanilla. Bring to a boil. Boil for 1 minute. Remove from heat. Add vanilla and beat until thick enough to spread. |
