ZUCCHINI CASSEROLE 
4 c. diced zucchini
1 medium onion, chopped
3 lg. eggs
1/2 c. oil
1/2 c. grated sharp cheese
1 c. Bisquick
1 tsp. salt
1/2 tsp. pepper
1 tsp. oregano

Mix zucchini, onion, cheese, Bisquick, and seasonings well in a large bowl. Beat eggs and oil together and pour over zucchini mixture, blending well. Bake in a well greased casserole for 40 to 50 minutes at 350 degrees. (Freezes and reheats well.)
