AMBROSIA TOSSED SALAD 
Be sure to chill the colorful fruit spinach mixture in a separate container from the dressing so that the dressing won't water out. Toss together just before serving.

4 c. torn spinach or leaf lettuce
1 med. apple, cored & sliced
1 (11 oz.) can pineapple tidbits with mandarin oranges, drained
1/2 c. soft style cream cheese with strawberries
1/4 c. orange juice
1 tbsp. lemon juice
1/3 c. flaked coconut

In a salad bowl combine the spinach, apple and pineapple orange mixture; toss well. Cover and chill. For dressing, stir together the cream cheese, orange juice and lemon juice. Cover and chill. Before serving, toss together the dressing, and the spinach mixture. Sprinkle with coconut. Makes 6 servings.
