SUNSHINE CARROT SALAD 
2 c. shredded carrots
1 c. pineapple chunks
1 c. mandarin oranges
1/2 c. sunflower seeds (raw or toasted)
1/2 c. shredded coconut
1/2 c. raisins
4 tbsp. mayonnaise or yogurt

Mix all ingredients and refrigerate for at least 2 hours.
