PORK CHOW MEIN 
1 lb. Chinese noodles or spaghetti noodles
2 tbsp. soy sauce
5 tbsp. oil or sesame oil

Cook noodles and drain. Sprinkle with soy sauce and oil. Fry until crisp. Slice and set aside: shrimp or ham 1 lb. bean sprouts, fresh 5 stalks of bok choy, sliced 2 carrots, julienne 3 to 4 dried Chinese mushrooms, thin strips (soaked) 1 green pepper, julienne 3 stalks celery, sliced 1 med. yellow onion, sliced 1 tbsp. oil

Stir fry meat in oil. Cook until done. Add vegetables and stir fry to your taste. Add sauce to vegetable mix: 1/2 c. water left from mushroom juice White pepper to taste 2 tbsp. cornstarch plus 2 tbsp. water

When all the mix is cooked, pour over noodles. Chop green onions for garnish. Also fry scrambled eggs and cut in strips for garnish.
