ELIZABETH CHICKEN 
5 lb. chicken
1 lb. egg noodles
2 1/2 c. chopped celery
2 c. chopped onions
1 can pimiento pieces
2 lbs. longhorn cheese, cubed
1 can mushroom pieces
Salt & pepper
Broth
Cracker crumbs

Cook chicken, pick off, mix chicken with uncooked noodles, chopped celery and onions. Salt and pepper. Add pimientos, mushrooms and cheese. Put into roaster pan. Pour enough broth over to be even with mixture. Bake at 350 degrees for 1 hour. Remove from oven and cover with cracker crumbs. Bake 35 to 40 minutes longer.
