SPINACH RISOTTO CASSEROLE | |
1 pkg. MJB herb & mushroom brown rice mix 1 egg 1 tbsp. flour 2 c. cottage cheese 1 (10 oz.) pkg. frozen chopped spinach, thawed & drained 1/2 c. onion, chopped 1 clove garlic, minced 1/2 tsp. leaf thyme 2 tbsp. Parmesan cheese 2 tbsp. sliced almonds Prepare MJB rice according to package directions. Mix egg with flour and cottage cheese. Stir in cooked rice, spinach, onion, garlic and thyme. Turn into prepared 10-inch square baking dish. Top with cheese and almonds. Bake 30 minutes in 375 degree oven. Makes 8 servings. |
