ITALIAN POTATO DUMPLINGS WITH
MEAT SAUCE
 
6 med. potatoes, cooked & mashed
1/2 c. grated Parmesan cheese
4 egg yolks
Salt & pepper to taste
1 c. flour (about)

Peel potatoes while still hot. Mix all ingredients except flour. Add as much flour as needed to make a dough that will roll. Mix well, then roll on a floured board into a rope about 1/2" thick. Cut into 1" pieces. Drop gnocchi into rapidly boiling, salted water and cook about 5 minutes. Gnocchi will come to the surface when cooked. Remove from water with a strainer and place on serving dish. Pour rich meat sauce on top. Sprinkle with 1/4 cup grated Parmesan cheese.
