HAWAIIAN FRUIT CAKE 
1 c. drained, crushed pineapple
2 tsp. baking soda
1/2 c. butter
1 1/2 c. brown sugar
2 eggs, well beaten
3 c. sifted flour
1 tsp. salt
1 tsp. cinnamon
1/2 tsp. nutmeg
1/2 tsp. cloves
1 c. bleached raisins
1 c. candied pineapple
1 c. dates, chopped
1/2 c. candied cherries
2 c. pecans
1 tsp. lemon extract
Wine glass brandy

Heat pineapple and dissolve soda in it. Cream butter. Add sugar and eggs. Combine dry ingredients. Mix fruits with hands. Add dry ingredients and fruits alternately. Line bread pans with heavy paper. Cover with aluminum foil. Bake at 250 degrees for 1/2 hour. Gradually increase heat to 350 degrees over 1 1/2 hours. Total 2 hours.
