KIM'S CHICKEN ALMONDINE 
1 tsp. oil (for skillet)
1/4 c. ground almonds
1/4 c. plain dried bread crumbs
1/8 c. grated Parmesan cheese
2 boneless chicken breast halves (pound chicken to 1/8 inch thickness)
1/2 c. skim milk

In bowl, combine almonds, bread crumbs and grated Parmesan cheese. Dip chicken halves in skim milk then coat in bread crumb mixture. In skillet heat oil. Add chicken and brown on both sides for about 5 minutes.
