JESSIE FRIED CHICKEN 
1 chicken
Season salt to taste
2 lbs. shortening

Cut chickens that have been washed and dried into quarter size pieces (one chicken yields 4 quarters), season chicken with seasoning salt. Place vegetable oil or shortening in large skillet. Use enough oil to cover chicken. Let oil heat until bubbles form. Use medium to medium high heat. Place chicken in paper bag containing flour. Shake until chicken is completely covered. Turn chicken over when brown.
