CREAM OF BROCCOLI SOUP 
3 c. chopped broccoli
1/3 c. chopped onion
1/4 c. butter
1/2 c. flour
2 c. evaporated milk
14 oz. chicken broth
1/4 tsp. salt
1/2 tsp. pepper
1/2 tsp. yellow mustard
1 c. American cheese, cubed

Cook broccoli and onions until tender. Drain and set aside. Melt butter in a pan. Slowly add the flour and then the milk. Stir and cook until thickened. Add 1 cup of cheese and stir until melted. Add chicken broth, salt, pepper and mustard. Add broccoli and onions.
