SICILIAN MEAT ROLL 
2 eggs, beaten
3/4 c. soft bread crumbs
1/2 c. tomato juice
2 tbsp. parsley
1/2 tsp. dried oregano
1 c.ove garlic
2 lb. ground beef
8 slices boiled ham
1 1/2 c. Mozzarella cheese, shredded
3 slices Mozzarella cheese

Combine first 6 ingredients, 1/4 teaspoon salt, and 1/4 teaspoon pepper, add beef, mix well. On wax paper pat meat to 12 x 10 inch rectangle, arrange ham on top, then shredded cheese starting from one end roll meat using paper to lift; seal edge and ends. Place seam side down in a 13 x 9 x 2 inch pan, bake at 350 degrees for 1 1/4 hours. Center will be pink. Halve cheese slices, place on top. Return to oven until melted.
