GLAZED POTATO DOUGHNUTS 
1 pkg. yeast
1/4 c. warm water

Dissolved yeast in warm water. 1/4 c. shortening 1/4 c. sugar 1 tsp. salt 3/4 c. mashed potatoes (instant may be used) 2 eggs, beaten 5-6 c. flour 1 lb. powdered sugar 6 tbsp. water 1 tbsp. vanilla

Combine milk, shortening, sugar and salt. Cool until lukewarm. Stir in yeast, potatoes and eggs.

Gradually add enough flour to make soft dough. Turn onto floured surface and knead until smooth and satin-like. Place in well greased bowl and turn to grease top. Cover and let rise in warm place.

Roll to 1/2 inch thickness and cut with 3 inch cutter. Cover; let rise until double. Fry in oil or lard at 375 degrees. Glaze with powdered sugar and water. Makes 42.
