ZUCCHINI CASSEROLE 
4 c. diced zucchini, with skins
1 med. onion
3 lg. eggs
1/2 c. oil
1/2 c. grated cheddar cheese
1 c. Bisquick or Tea Bisk
1 tsp. salt
1/4 tsp. pepper
1 tsp. oregano

Mix zucchini, onion, cheese, and Bisquick with seasoning in greased 2 quart casserole.

Beat eggs, oil, and pour over zucchini; mix. Bake 40 minutes at 350 degrees.

This can be overcooked, undercooked, incorrectly halved, frozen, or reheated! Serves 4-6.
