ENCHILADAS 
8 tortillas (white flour)
Chili Sauce
8 oz. Cheddar cheese
1/2 c. olive oil
Chorizo

Dip tortillas in hot oil, then in Chili Sauce. Spoon Chorizo (hamburger or sausage will do seasoned to your taste) on top of each tortilla and top with grated cheese. Roll and arrange in a baking dish. Spoon Chili Sauce over the top of each roll and sprinkle with cheese. Bake at 350 degrees until cheese melts and enchiladas are hot. Serves 4.
