SQUASH CASSEROLE 
2 cans squash or 1 lb. squash
1 med. onion, chopped
1 can cream of chicken soup
8 oz. sour cream
1 1/2 stick butter, melted
1 c. grated cheese, or more
1 1/2 tube Saltines, crushed

Mix squash, onion, chicken soup, sour cream and half of the melted butter. Set aside. Mix remaining half of melted butter with half of the crushed saltines and half the cheese. Sprinkle over bottom of casserole dish. Pour squash mixture over crumb mixture. Mix remaining crumbs and cheese and sprinkle over squash mixture. Bake at 350 degrees for 45 minutes.
