SWEET POTATO CASSEROLE 
3 c. mashed sweet potatoes, boiled or canned
2 eggs, beaten well
1 c. brown sugar
1/3 stick soft butter
1 c. white sugar
1 tsp. vanilla
1 stick soft butter
1/3 c. plain flour
1 c. nuts (black walnuts, English walnuts, or pecans)

Mix potatoes, eggs, white sugar, vanilla, and 1 stick butter together and pour into casserole dish. Mix 1 cup brown sugar, 1/3 cup plain flour, and 1/3 stick soft butter. Crumble together and sprinkle over potatoes. Top with 1 cup nuts. Bake at 350 degrees for 30 minutes. This casserole can be made ahead of time and placed in refrigerator until needed. It saves last minute rush when company is coming for dinner.
