SICILIAN-STYLE LEMON CHICKEN 
4 large chicken breast halves
1 c. fresh squeezed lemon juice
1/2 c. extra virgin olive oil
5 cloves of garlic (minced)
2 tsp. dried sweet basil
1/4 tsp. salt

Brown chicken breasts until almost done. (I use an indoor grill.) Mix the remaining ingredients. Put the chicken breasts in a baking dish, and pour the lemon sauce over top.

Bake in a preheated oven at 400°F for 15 minutes. Remove from oven and let stand 5 minutes. Serve.

Suggested sides: Caesar or Greek salad, farfalle pasta (bowtie) with pesto sauce, and bread sticks.
