SPICED PEARS WITH TOFU CREAM 
4 Bosc pears (or 1 per 2 servings)
3 c. apple juice
1 tsp. cinnamon
Pinch of ground cloves
Pinch of ground ginger
1/2 block med. tofu
1/4 c. brown rice syrup (can substitute maple syrup)
1/4-1/2 c. water
1/8 tsp. cinnamon

Remove core from pears, leaving outside skin on. Quarter, cut again into eighths. Place in 9"x13" baking dish. Mix apple juice and spices, pour over pears. Bake at 350 degrees for 30 to 40 minutes. Test for tenderness but not mushy. Buzz tofu, rice syrup, water and cinnamon until smooth. Serve over warm or chilled pears. (Easy, delicious, no sugar, fat or cholesterol dessert.) Serves 8.
