SPANISH TEA CAKE 
1 1/4 cups granulated sugar, divided
1 cup (2 sticks) butter
2 eggs
zest of one lemon
3 cups all-purpose flour
pinch of salt
1 tbsp. baking powder
1 cup milk

Preheat oven to 350°F.

Mix together one cup of sugar, then butter and eggs until light and creamy. Then briefly mix in lemon zest.

In separate bowl combine flour, salt and baking powder, briefly mix with fork. Then mix dry mixture into batter until combined well, don't over mix. Then pour in milk slowly until combined.

Pour into prepared muffin tins, sprinkle remaining 1/4 cup sugar on top of cakes. Bake at 350°F for 20 minutes (should check at 15 minutes.)
