VEGGIE BURRITOS | |
2 tbsp. sunflower oil 1 c. onion, finely chopped 3 cloves garlic, minced 1 tsp. oregano 1 c. green pepper, chopped 1 c. zucchini, chopped 1 c. carrot, grated 1 can refried beans (vegetarian) 1 sm. can green chili peppers 1 tsp. ground cumin 1/2 tsp. salt 10 (10") white flour tortillas 1 1/2 c. grated Cheddar cheese 1 1/2 c. grated jalapeno pepper Jack cheese Salsa Sour cream Saute onions and garlic in hot oil in a frying pan with oregano. Add the green peppers, zucchini, carrot and chili peppers. Saute 5 minutes until tender, but not overcooked. Remove from heat and add salt and cumin. Have someone to help you warm the tortillas. I microwave them for 10-15 seconds to soften them up. Spread about 2 tablespoons refried beans in center of tortilla, add about 1/2 cup of vegetable mixture, sprinkle with a mixture of cheeses. Fold up sides, then roll the rest of the tortilla. Place seam side down on a cookie sheet. Finish with the rest of the tortillas. Brush with a small amount of salsa. Bake at 350 degrees for about 10 minutes, until golden brown. Serve with more salsa and sour cream. These are best baked right before eating. |
