VEGGIE BURRITOS 
2 tbsp. sunflower oil
1 c. onion, finely chopped
3 cloves garlic, minced
1 tsp. oregano
1 c. green pepper, chopped
1 c. zucchini, chopped
1 c. carrot, grated
1 can refried beans (vegetarian)
1 sm. can green chili peppers
1 tsp. ground cumin
1/2 tsp. salt
10 (10") white flour tortillas
1 1/2 c. grated Cheddar cheese
1 1/2 c. grated jalapeno pepper Jack cheese

Sour cream

Saute onions and garlic in hot oil in a frying pan with oregano. Add the green peppers, zucchini, carrot and chili peppers. Saute 5 minutes until tender, but not overcooked. Remove from heat and add salt and cumin.

Have someone to help you warm the tortillas. I microwave them for 10-15 seconds to soften them up. Spread about 2 tablespoons refried beans in center of tortilla, add about 1/2 cup of vegetable mixture, sprinkle with a mixture of cheeses. Fold up sides, then roll the rest of the tortilla. Place seam side down on a cookie sheet.

Finish with the rest of the tortillas. Brush with a small amount of salsa. Bake at 350 degrees for about 10 minutes, until golden brown. Serve with more salsa and sour cream. These are best baked right before eating.

Since microwave ovens vary in power, you may need to adjust your cooking time.
