EASY CHICKEN AND RICE 
1 c. rice, cooked (makes 2 c.)
1 env. onion soup mix or 1 onion, diced
Chicken pieces as desired
Salt and pepper to taste
1 can mushroom soup

Sprinkle rice into baking dish. Sprinkle soup mix or onion over. Add 1 cup water. Sprinkle chicken with salt and pepper. Place over onion soup. Spread mushroom soup over chicken. Bake, uncovered in 350 oven for 1 1/2 hours or so. Add water as necessary to keep moist.
