HARVEST RICE 
2 tbsp. butter
1 c. brown rice
1/2 c. walnuts, coarsely chopped
1/2 c. diced celery
1 handful raisins
2 1/2 c. chicken or beef bouillon
Salt and pepper to taste
Grated rind of 1 orange
1 apple, peeled, cored and diced

Heat butter in large skillet. Add rice, nuts and celery. Saute, stirring for 5 minutes until rice is opaque. Add bouillon and seasoning. Bring to a boil.

Turn mixture into 1 1/2 quart baking dish. Cover and bake at 350 degrees for 30 minutes. Uncover and bake 30 minutes longer, until rice is tender and liquid is absorbed. Before serving, stir in orange rind, raisins and apple. Serves 6-8.
