EASY CARAMEL CORN 
16 c. popped corn
1 c. packed brown sugar
1/2 c. salt, optional
Pam vegetable spray
1/2 c. butter
1/4 c. light corn syrup
1/2 tsp. baking soda
Brown grocery bags

Mix brown sugar, butter and syrup in large kettle on stove. Cook until ingredients forms soft ball in cold cup of water, (do not boil) remove from heat and add baking soda. (This will foam up.) Pour syrup mixture over popped corn, mix with large spoon.

Place this mixture in a brown grocery bag sprayed with Pam, roll down the top securely. Microwave 1 1/2 minutes then shake the bag to coat corn. Microwave again for 1 minute and shake the bag, then microwave 30 seconds and shake the bag to coat corn. Pour this out on wax paper on a table or counter to cool. A delicious and quick treat for a crowd of hungry kids or adults.

This can be baked on cookie sheets if you do not have a microwave. Set oven at 200 degrees, put coated popcorn on cookie sheets. Turn every 20 minutes for 1 hour, then cool and eat.

Since microwave ovens vary in power, you may need to adjust your cooking time.
