SWEET POTATO SOUFFLE 
3 sweet potatoes (2 c. mashed)
2 eggs
3/4 c. milk
1/2 tsp. cinnamon
1/2 c. chopped pecans
3/4 c. sugar
12 tbsp. butter
1/2 tsp. nutmeg
3/4 c. crushed corn flakes
1/2 c. brown sugar

Add sugar, eggs, 6 tablespoons butter, and milk. (May need more milk.) Add nutmeg and cinnamon. Whip well. Spread in greased casserole dish. Bake in 400 degree oven for 20 minutes. Mix corn flakes, pecans, brown sugar and remaining butter. Cover the casserole with this topping and return to oven for 10 minutes.
