SURPRISE DESSERT 
CRUST:

4 egg whites
1 c. + 2 tbsp. sugar
1/2 tsp. baking powder
1/4 tsp. salt
18 crushed soda crackers
1 c. coconut
1/2 tsp. vanilla

Beat egg whites stiff; gradually add sugar, baking powder and salt. Fold in crackers, coconut and vanilla. Spread mixture into 9x13 glass baking dish. Bake for 30 minutes at 325 degrees. Let cool.

TOPPING:

2 c. Cool Whip
2 tbsp. sugar
1/2 tsp. vanilla
1 c. crushed pineapple (well drained)

Mix all ingredients together; spread over cooled crust.
