QUICHE LORRAINE 
Pie crust for 9 inch pie
12 slices bacon, cooked crisply and crumbled
1 c. shredded Swiss cheese
1/3 c. finely chopped onion
4 eggs
2 c. whipping cream
3/4 tsp. salt
1/4 tsp. pepper

Heat oven to 425 degrees. Prepare pastry. Sprinkle bacon, cheese, and onion in pie shell. Beat eggs, add cheese and onion, cream and seasonings; blend together. Pour into pie plate. Bake 15 minutes. Reduce heat to 300 degrees. Bake until knife inserted in center comes out clean, about 30 minutes. Let stand 10 minutes before serving.
