SQUASH CASSEROLE 
1 1/2 c. cooked squash
3 tsp. pimento, optional
3 tbsp. melted butter
1 c. med. sharp cheese, diced
1 c. cracker crumbs (or Pepperidge Farm dressing)
1 c. milk, scalded
2 eggs, well beaten
3 tbsp. chopped onion
Salt and pepper to taste

Combine all ingredients adding milk last. Pour into well greased 6 x 12 inch baking dish. Bake 1 hour at 350 degrees.
