CREAM OF TOMATO SOUP | |
1 tsp. finely chopped onion 3 tbsp. flour 2 tsp. sugar 2 c. tomato juice 3 tbsp. butter 1 tsp. salt 1/8 tsp. pepper 2 c. cold milk In a saucepan, saute onion, in butter. Stir in flour, sugar, salt, and pepper. Cook until smooth and bubbly, stirring constantly. Remove from heat; gradually stir in tomato juice. Bring to a boil, stirring constantly; boil 1 minute. Stir hot tomato mixture gradually adding cold milk. Serve immediately with crackers. Yield: 6 servings. |
