BEET PICKLES 
1 gallon beets
1 cup vinegar
1 cup sugar
1 teaspoon allspice
2 cups water

Boil beets until tender and skins will slip off easily. Pour off water. Run cold water on and slip off skins. Bring vinegar, sugar, water and allspice to a boil. Put beets in jars; pour boiling liquid over and seal jars. Wait a few days before eating them.
