SCALLOP PIZZA | |
3 c. cooked brown rice 1/4 c. Italian dressing 1 egg 1 egg white 3/4 lb. bay or sea scallops 3/4 c. chopped tomatoes 1/2 c. chopped green onions 1/2 c. Mozzarella cheese 1 tbsp. chopped fresh or 1 tsp. dried basil leaves 1 tbsp. chopped fresh or 1 tsp. dried oregano leaves Mix together rice, dressing, egg and egg white. Spread mixture in a greased pan and bake 20 to 25 minutes at 425 degrees. Layer toppings and bake 10 to 12 minutes longer. |
