SEAFOOD QUICHE 
1/2 lb. backfin crabmeat
1/2 lb. shrimp
1/2 lb. scallops
1/2 med. onion, diced
2 eggs
1 tbsp. grated Parmesan cheese
1/2 c. Swiss cheese
1/4 c. milk
1 (9") deep dish unbaked pie shell
3 c. grated cheddar cheese

Put seafood in bowl. Add eggs, grated cheese, milk and onion; mix well. Mix in Swiss cheese. Pour into deep dish pie shell and cover with the cheddar cheese. Bake at 350 degrees for 45 minutes. Let cool 30 minutes, then slice.
