RHUBARB MUFFINS 
1 1/2 c. brown sugar
1/2 c. oil
1 egg
2 tsp. vanilla
1 c. buttermilk
1 1/2 c. finely cut rhubarb
1 tsp. baking soda
2 1/2 c. flour
1 tsp. baking powder
1 tsp. salt

Mix ingredients and spoon into about 20 well greased muffin tins. Combine 1/2 sugar and 1 teaspoon cinnamon. Sprinkle a little over each muffin. Bake at 350 degrees for 20 to 25 minutes.
