STRAWBERRY VELVET CAKE 
1 1/2 c. Bisquick baking mix
1/2 c. sugar
1/2 c. milk
2 tbsp. shortening
1 tbsp. vanilla
1 egg

STRAWBERRY TOPPING:

2 pkgs. (3 oz.) softened cream cheese
1 tbsp. grated lemon peel
1 1/2 c. fresh strawberry halves

STRAWBERRY GLACE:

1/2 c. strawberries
1/2 c. sugar
1 tbsp. cornstarch
1/4 c. water
1/2 tbsp. lemon juice
3 to 4 drops red food coloring

Heat oven to 350 degrees, grease and flour 9 x 1 1/2 inch pan. Beat baking mix, sugar, milk, shortening, vanilla and egg in large bowl on low speed. Scrape bowl frequently 30 seconds; then beat on medium, about 4 minutes. Pour into pan.

Bake until toothpick inserted in center comes out clean, 30 to 35 minutes. Cool on wire rack, 5 minutes. Invert on serving plate. Prepare Strawberry Glace: Cool, then mix cream cheese and lemon peel, spread over top of cake, arrange strawberries on cream cheese mixture; pour strawberry glace over top of cake. Refrigerate until set, at least 1 hour. Serve with sweetened whipped cream. Serves 6 to 8.
