PEPPER COOKIES | |
1/2 c. butter 1/2 c. white sugar 1/2 c. dark corn syrup 1 1/2 tsp. white vinegar 1 egg, slightly beaten 2 1/4 c. flour 1/2 tsp. baking soda 1/2 tsp. ginger 1/2 tsp. cinnamon 1/2 tsp. ground cloves 1/4 tsp. pepper In medium saucepan melt butter. Add sugar, syrup, and vinegar. Bring just to boiling; remove immediately from heat and cool to room temperature. Stir in egg. Combine flour, soda, and remaining spices. Stir into egg mixture, mixing well. Cover and refrigerate for several hours or overnight. Divide dough into 4 portions. Chill until ready to roll out. On a lightly floured surface, roll dough very thin (less than 1/2-inch thick). Cut into shapes with cookie cutter. Place on greased cookie sheet and bake at 375 degrees for 4-5 minutes or until barely brown around edges. Immediately transfer to rack. Cool and store in covered tins. Makes about 5 dozen. |
