MARYLAND CRAB CAKES 
2 lb. blue crab meat
1/4 c. chopped onion
1/4 c. melted fat or oil
2 eggs, beaten
1 tsp. powdered mustard
1 tsp. salt
Dash of pepper
Dash of cayenne pepper
1 c. dry bread crumbs
Fat for frying

Remove any shell or cartilage from crab meat. Cook onion in fat until tender. Combine all ingredients except crumbs. Shape into 12 cakes and roll in crumbs. Fry in fat at moderate heat until brown on one side. Turn carefully and brown the other side. Cooking time, approximately 8 to 10 minutes. Drain on absorbent paper. Makes 6 servings.
