HADDOCK CASSEROLE 
1 lb. haddock
1 can cream of shrimp soup
1/4 c. cream or milk
1 stack Ritz crackers, crumbled and sauteed in 1/4 c. butter

Butter casserole, put fish in bottom in serving size pieces. Cover with soup, spreading evenly. Spread cream over this. Cover with cracker crumbs and a little pepper. Cook at 375 degrees for 25 to 30 minutes.

Serves 4.

Variation: Omit the Ritz crackers and sprinkles fillets with parsley flakes and paprika. You may also cook 1/2 inch thick potato slices at the same time. Just add a salad for a quick meal.
