EGGPLANT PARMIGIANA | |
1/2 lb. very lean ground beef 1/2 tsp. onion powder 1/4 tsp. garlic powder 1 (28 oz.) can tomatoes 1 (6 oz.) can tomato paste 1/2 tsp. oregano 1 tsp. basil 1 lg. firm eggplant 1/4 c. Parmesan cheese Cook ground beef until crumbly with garlic and onion powder. Add tomato products and spices and cook covered, for 15 minutes. Meanwhile, peel eggplant and slice 1/4 inch thick. Starting with sauce layer eggplant and sauce into a baking pan, ending with sauce. Sprinkle with cheese and bake at 350 degrees for 45 minutes. |
