SPICED BEEF TENDERLOIN 
4 1/2 - 5 tenderloin
1 c. Marsala wine
1/2 c. Peckapeppa sauce
1/2 c. Worcestershire sauce
5-6 slices bacon
1 recipe Brown Sauce (follows)

Marinate overnight. Wrap in bacon. Bake at 475 degrees for 10 minutes. Reduce to 325 degrees, medium, 22 to 25 minutes per pound.

BROWN SAUCE:

8 tbsp. butter
8 tbsp. flour
4 c. beef stock
1 tbsp. Kitchen Bouquet
1/2 c. sherry
Salt & pepper

Bring beef stock to boil and simmer. Melt butter. Add flour. Cook 5 minutes. Add Kitchen Bouquet and simmer 10 minutes. Add seasoning.
